  • Preparation: 180 min
  • Cooking: 15 min
  • Makes: 1 serving (427 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy

Ingredients

  • 400 g Milk, whole
  • 1.8 g Salt
  • 25 g Lemon juice

Method

  1. Domiati is unusual among white cheeses in that the salt is dissolved directly into the milk before curdling, rather than added afterward; stir the salt into the milk until fully dissolved.
  2. Heat the salted milk in a pan to just below boiling, about 85°C (185°F), stirring so it doesn't catch.
  3. Stir in the lemon juice (a workable stand-in for rennet), remove from the heat, and let it sit undisturbed for 10 minutes as it separates into curds and whey.
  4. Ladle the curds into a cloth-lined mould or sieve set over a bowl, letting the whey drain away.
  5. Press lightly and leave to drain for 2-3 hours at room temperature, then chill; for the tangier, firmer traditional style, keep it submerged in its own whey in the fridge for a few extra days before eating.
