  • Makes: 1 serving (265 g)
  • Difficulty: Easy

Ingredients

  • 4 g Anise seed
  • 250 g Water
  • 10 g Sugar
  • 1 g Baking soda

Method

  1. Simmer the anise seed (a stand-in for licorice root, which shares its distinctive sweet, aromatic flavor) in the water for 10-15 minutes to draw out its flavor and dark color.
  2. Strain out the solids and stir the sugar into the warm liquid until fully dissolved.
  3. Chill the liquid thoroughly, for at least an hour.
  4. Just before serving, stir in the baking soda, which is what makes traditional erq sous foam up when poured.
  5. Pour from a height into a glass so a light foam forms on top, and serve very cold.
