One serving has 382 kcal and 5 g protein, and at least a fifth of a woman's daily need of thiamin (34%), selenium (32%), niacin (24%), vitamin A (24%), riboflavin (21%) and folate (21%). Ready in 55 minutes.

- Preparation: 45 min
- Cooking: 10 min
- Makes: 1 serving (95.4 g)
- Difficulty: Hard
- Diets: Vegetarian
- Contains: dairy, gluten
Ingredients
- 45 g Flour, bread (strong)
- 25 g Water
- 0.4 g Salt
- 20 g Ghee
- 5 g Vegetable oil
Method
- Mix the flour, salt and water into a smooth, elastic dough and knead for about 10 minutes.
- Rub the surface with a little of the vegetable oil, cover, and rest for 30 minutes.
- Oil your hands with the remaining oil and stretch and pull the dough out into a very thin, almost see-through sheet on an oiled surface.
- Dot the sheet generously with the ghee, then fold it repeatedly on itself, building up many thin, buttery layers, into a compact square parcel.
- Rest for another 15 minutes, then cook on a hot, dry, heavy skillet over medium heat, pressing gently, for 4-5 minutes per side, until golden and the layers have puffed and separated.
- Pull apart gently to reveal the flaky layers and serve warm, plain or drizzled with honey.
