  • Preparation: 2880 min
  • Makes: 1 serving (141 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free, Low carb
  • Contains: dairy

Ingredients

  • 100 g Feta cheese
  • 40 g Milk, whole
  • 0.5 g Cayenne pepper

Method

  1. Crumble the feta cheese (a stand-in for the aged domiati traditionally used) into a clean jar.
  2. Mash in the milk until it loosens into a thick, spreadable paste, then stir in the cayenne pepper.
  3. Seal the jar and leave it in a cool place for 2 days, stirring once a day, so the flavor starts to turn sour and pungent.
  4. This is a quick version; the traditional cheese is left to ferment for weeks to months in a sealed jar, growing much stronger, so keep it going longer, stirring every few days, if you want the fuller, pungent flavor.
  5. Serve as a strong, salty spread with bread and raw onion.
