  • Cooking: 55 min
  • Makes: 1 serving (270 g)
  • Difficulty: Hard
  • Diets: Gluten-free, Dairy-free
  • Contains: beef, celery

Ingredients

  • 60 g Beef tripe, raw
  • 40 g Rice, white, long-grain
  • 30 g Onions, raw
  • 5 g Garlic, raw
  • 10 g Tomato paste
  • 5 g Parsley, fresh
  • 5 g Cilantro, fresh
  • 0.5 g Cumin
  • 5 g Chili peppers, red, raw
  • 8 g Vegetable oil
  • 1 g Salt
  • 100 g Beef broth

Method

  1. Clean the tripe thoroughly; it stands in here for the beef intestine casing traditionally stuffed and simmered for mombar.
  2. Mix the raw rice with the chopped onion, garlic, tomato paste, parsley, cilantro, cumin, chili and half the salt to make the filling.
  3. Lay the filling inside the tripe and roll or fold it to loosely enclose the filling, leaving room for the rice to swell, then secure with kitchen string.
  4. Simmer gently in the beef broth for 45-50 minutes, turning occasionally, until the rice is fully cooked and tender.
  5. Lift out, brush with the oil, and crisp under a hot broiler or in a hot pan for a few minutes per side.
  6. Season with the remaining salt and serve hot, sliced into pieces.
