  • Preparation: 120 min
  • Cooking: 35 min
  • Makes: 1 serving (116 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 45 g Flour, all-purpose
  • 15 g Milk, whole
  • 12 g Eggs, whole, raw
  • 13 g Butter, unsalted
  • 8 g Sugar
  • 8 g Sugar, brown
  • 1 g Yeast, active dry
  • 0.3 g Salt
  • 6 g Cocoa powder
  • 8 g Chocolate, dark

Method

  1. Makes 1 slice; multiply the ingredients by 10 for a whole loaf. Warm the milk slightly, whisk in the yeast and a pinch of the sugar, and let stand 10 minutes until foamy.
  2. Mix the flour, remaining sugar and salt, then work in the egg, the yeasted milk and half the butter, softened, to form a smooth, slightly sticky dough; knead 8-10 minutes.
  3. Cover and let rise in a warm place for about 1.5 hours, until doubled.
  4. Melt the remaining butter and mix with the brown sugar and cocoa powder to make a spreadable paste; roll the dough out into a rectangle, spread the chocolate paste over it, and scatter the chopped dark chocolate on top.
  5. Roll the dough up tightly into a log, slice it lengthwise, twist the two halves together, and place in a loaf tin; cover and let rise for another 30-40 minutes.
  6. Bake at 175 °C (350 °F) for 30-35 minutes until deep golden and a skewer inserted into the bread part comes out clean; cool before slicing.
