  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, honey

Ingredients

  • 35 g Flour, all-purpose
  • 10 g Butter, unsalted
  • 8 g Eggs, whole, raw
  • 8 g Sugar
  • 0.5 g Baking powder
  • 0.2 g Salt
  • 10 g Poppy seeds
  • 6 g Honey
  • 1 g Lemon zest

Method

  1. Makes 1 portion (2-3 cookies); multiply the ingredients by 8 for a full batch of about 20. Cream the butter and sugar, then beat in the egg.
  2. Mix in the flour, baking powder and salt to form a soft dough; wrap and chill for 30 minutes.
  3. Meanwhile, warm the poppy seeds with the honey and lemon zest in a small pan for 2-3 minutes to make a thick, spreadable filling, then let it cool.
  4. Roll the dough out and cut into circles about 8 cm across; spoon a little poppy seed filling into the center of each.
  5. Pinch the edges up into three points to form a triangle, pressing firmly at the corners so it holds its shape while baking.
  6. Bake at 180 °C (350 °F) for 15-18 minutes until the edges are lightly golden; cool on a rack before serving.
