One serving has 521 kcal and 11 g protein, and at least a fifth of a woman's daily need of thiamin (80%), selenium (62%), riboflavin (51%), folate (51%), niacin (42%) and manganese (34%). Ready in 580 minutes.

- Preparation: 40 min
- Cooking: 540 min
- Makes: 1 serving (171 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, egg, gluten
Ingredients
- 90 g Flour, all-purpose
- 20 g Butter, unsalted
- 8 g Sugar
- 10 g Eggs, whole, raw
- 1.5 g Yeast, active dry
- 1 g Salt
- 40 g Water
Method
- Whisk the yeast into the warm water with a pinch of the sugar and let stand 10 minutes until foamy.
- Mix in the flour, remaining sugar, salt and egg, and knead for 8-10 minutes into a smooth, soft dough; cover and let rise for 1 hour.
- Divide the dough into balls, flatten each thin, brush generously with the melted butter, then stack and layer them into a small round pot or pan, brushing more butter between the layers.
- Cover tightly and let rise again for 30 minutes.
- Bake, covered, at a low 130 °C (265 °F) for 1 hour, then reduce to 100 °C (212 °F) and continue baking, still covered, for 7-8 hours, traditionally overnight, until deeply golden and pull-apart soft.
- Turn out and pull apart into buttery layers to serve, traditionally for a leisurely Shabbat breakfast.
