Ingredients

  • 35 g Flour, all-purpose
  • 13 g Butter, unsalted
  • 5 g Sugar
  • 1 g Yeast, active dry
  • 10 g Milk, whole
  • 0.2 g Cardamom

  • 25 g Dates
  • 0.1 g Cumin

Method

  1. Makes 1 portion (2-3 cookies); multiply the ingredients by 8 for a full batch of about 24. Warm the milk slightly and stir in the yeast and a pinch of the sugar; leave for 10 minutes until foamy.
  2. Rub the butter into the flour, salt, remaining sugar and cardamom until crumbly, then mix in the yeasted milk to form a soft dough; cover and let rise in a warm place for 30 minutes.
  3. Mash the dates with a little extra butter and the cumin, a stand-in for the traditional nigella seed, into a smooth, thick paste.
  4. Divide the dough into small balls, flatten each, spoon a little date paste into the center, and pinch the dough closed around it; press gently into a flat round and sprinkle with sesame seeds.
  5. Bake at 180 °C (350 °F) for 15-18 minutes until pale golden; kleicha stay light in color, not deeply browned.
  6. Cool completely on a wire rack before serving; they keep well in an airtight container for about a week.
