Ingredients
- 90 g Flour, bread (strong)
- 1.2 g Yeast, active dry
- 2 g Sugar
- 1.5 g Salt
- 55 g Water
- 3 g Olive oil
Method
- Dissolve the yeast and sugar in the warm water and let stand for 10 minutes until foamy.
- Mix in the flour and salt and knead for 8-10 minutes into a smooth, elastic dough; cover and let rise for about 1 hour until doubled.
- Punch down and shape into an oval, then pinch and stretch the two ends into points to form the classic pointed torpedo shape; let rest 15-20 minutes.
- Brush the top lightly with the oil and slash it once down the middle.
- Bake at 230 °C (445 °F) for 12-15 minutes, ideally with a tray of hot water in the oven for steam, until deep golden and crusty.
- Cool for a few minutes on a rack before tearing or slicing; samoon is best eaten the same day, fresh and still warm.
