Ingredients

  • 130 g Lamb, ground, raw
  • 25 g Onions, raw
  • 100 g Eggplant, raw
  • 80 g Potatoes, raw
  • 60 g Tomatoes, raw
  • 15 g Tomato paste
  • 4 g Garlic, raw
  • 5 g Parsley, fresh
  • 12 g Olive oil
  • 1.3 g Salt
  • 0.3 g Black pepper
  • 0.4 g Cumin
  • 40 g Water

Method

  1. Mix the ground lamb with half the chopped onion, half the garlic, the cumin, black pepper and half the salt, and shape into small flat patties (kofta).
  2. Slice the eggplant and potato into rounds and fry them briefly in half the oil, a few minutes per side, until lightly golden; they will finish cooking in the oven, so drain them on paper towels.
  3. Brown the kofta patties in the same pan for 2-3 minutes per side, just to sear; they too will finish cooking through in the oven.
  4. Layer the fried potato, eggplant and kofta in a baking dish, tucking the sliced tomato and remaining onion and garlic between the layers.
  5. Mix the tomato paste with the water, remaining salt and remaining oil, and pour it evenly over the tray.
  6. Cover with foil and bake at 190 °C (375 °F) for 30-35 minutes, until the kofta is cooked through with no pink remaining and the vegetables are tender; scatter with parsley before serving.
