Ingredients
- 150 g Lamb shoulder, raw
- 60 g Parsley, fresh
- 30 g Cilantro, fresh
- 30 g Scallions, raw
- 1 g Fenugreek seeds
- 50 g Kidney beans, red, canned
- 1.5 g Lemon zest
- 15 g Vegetable oil
- 0.5 g Turmeric
- 200 g Water
- 1 g Salt
- 0.3 g Black pepper
Method
- Finely chop the parsley, cilantro and scallions.
- Heat some of the oil in a large pan and fry the chopped herbs over medium heat for 10-15 minutes, stirring often, until they darken and turn very fragrant; this long saute is essential to the dish's flavor. Set the herbs aside.
- In a pot, heat the remaining oil and brown the lamb with the turmeric.
- Add the water, sautéed herbs, kidney beans, lemon zest and fenugreek; cover and simmer for 1.5-2 hours, until the meat is completely tender and the stew has turned a deep, dark green.
- Season with the salt and black pepper, and serve hot over rice.
