Ingredients

  • 220 g Water
  • 25 g Sugar
  • 20 g Lemon juice
  • 2 g Mint, fresh

Method

  1. Warm the water with the sugar in a small saucepan over medium heat, stirring, until the sugar fully dissolves, about 3 minutes; do not let it boil hard.
  2. Remove from the heat and stir in the lemon juice; Persian cooks usually add a splash of rosewater here too, already counted within the water above.
  3. Let the syrup cool completely, then chill it in the refrigerator for at least 1 hour.
  4. Pour over ice in a tall glass, topping up with a little more cold water to taste, and float a few mint leaves on top before serving.
