- Cooking: 5 min
- Makes: 1 serving (69.6 g)

Ingredients
- 40 g Olives, green
- 10 g Walnuts
- 3 g Garlic, raw
- 8 g Olive oil
- 8 g Molasses
- 0.3 g Mint, dried
- 0.3 g Cayenne pepper
Method
- Toast the walnuts in a dry skillet over medium heat for 3-4 minutes, tossing often, until fragrant, then roughly chop them.
- Lightly crush the olives with the flat of a knife (or leave them whole) and put them in a bowl with the crushed garlic.
- Stir in the pomegranate molasses (plain molasses is a fair stand-in if that's what you have), olive oil, dried mint and a pinch of cayenne, and toss well to coat the olives.
- Fold in the toasted walnuts, then cover and marinate in the fridge for at least 1 hour, and up to 3 days for the best flavor, stirring occasionally.
- Serve cold as an appetizer with bread, letting diners scoop a little of the marinade with each olive.
