  • Preparation: 40 min
  • Cooking: 35 min
  • Makes: 1 serving (227 g)
  • Difficulty: Hard
  • Diets: Dairy-free
  • Contains: gluten, meat

Ingredients

  • 50 g Bulgur
  • 120 g Lamb, ground, raw
  • 35 g Onions, raw
  • 0.4 g Cinnamon
  • 0.2 g Allspice
  • 10 g Pine nuts
  • 1 g Salt
  • 10 g Olive oil

Method

  1. Soak the bulgur in cold water for 15 minutes, then drain very well and squeeze out excess moisture.
  2. Pulse or knead a third of the ground lamb with the soaked bulgur, half the onion, half the cinnamon and half the salt until it forms a smooth, cohesive paste; this is the shell.
  3. For the filling, cook the remaining onion in a little of the oil for 4-5 minutes, then add the remaining lamb, cinnamon, allspice and salt, and cook, breaking it up, for 6-8 minutes until browned and cooked through; stir in the pine nuts.
  4. Press half the bulgur-lamb shell mixture into an oiled baking dish, spread the cooked filling over it, then top with the remaining shell mixture, smoothing the surface.
  5. Score the top into a diamond pattern with a knife and brush with the remaining oil.
  6. Bake at 190 °C (375 °F) for 30-35 minutes until golden brown and cooked through; rest for 5-10 minutes, then cut along the scored lines to serve.
