  • Cooking: 20 min
  • Makes: 1 serving (154 g)
  • Difficulty: Medium
  • Diets: Vegan, Dairy-free
  • Contains: gluten, nut

Ingredients

  • 30 g Flour, all-purpose
  • 8 g Semolina
  • 30 g Sugar
  • 0.5 g Yeast, active dry
  • 0.5 g Baking powder
  • 60 g Water
  • 15 g Walnuts
  • 0.2 g Cinnamon
  • 10 g Vegetable oil

Method

  1. Makes 1 portion (2 filled pancakes); multiply the ingredients by 6 for a batch of 12. Whisk the flour, semolina, a third of the sugar, yeast and baking powder with the water into a smooth, thin batter; let rest for 20 minutes.
  2. Pour small rounds of batter onto a hot, ungreased non-stick pan and cook on one side only for 1-2 minutes, until set and small bubbles appear on top but the top stays pale; do not flip.
  3. Meanwhile, mix the chopped walnuts with a third of the sugar and the cinnamon for the filling, and dissolve the remaining sugar in a little water over low heat to make a simple syrup.
  4. While each pancake is still warm and pliable, spoon a little walnut filling onto the cooked side, fold it over into a half-moon, and pinch the edges firmly closed.
  5. Fry the folded pancakes in the oil for 2-3 minutes per side until golden and crisp, or bake at 190 °C (375 °F) for 12-15 minutes for a lighter version.
  6. Drizzle with the syrup while still warm and serve.
