Ingredients

  • 170 g Grouper, raw
  • 80 g Rice, white, long-grain
  • 60 g Onions, raw
  • 1 g Cumin
  • 0.3 g Turmeric
  • 15 g Olive oil
  • 10 g Tahini
  • 10 g Lemon juice
  • 8 g Pine nuts
  • 1.3 g Salt
  • 140 g Water
  • 60 g Fish stock

Method

  1. Season the fish with a little salt and pan-fry it in half the oil for 3-4 minutes per side until golden and just cooked through; set aside and keep warm.
  2. In the same pan, cook the sliced onion in the remaining oil over medium-low heat for 20-25 minutes, stirring occasionally, until deeply caramelized; set half aside for serving.
  3. Add the cumin and turmeric to the pan, then the rice, fish stock and water, and bring to a boil.
  4. Cover, reduce the heat to low, and simmer for 15-18 minutes until the rice is tender and the liquid is absorbed; season with the remaining salt.
  5. Whisk the tahini with the lemon juice and a splash of water into a smooth sauce.
  6. Spread the rice on a platter, flake the fish over the top, scatter with the reserved caramelized onion and toasted pine nuts, and serve with the tahini sauce on the side.
