  • Preparation: 40 min
  • Cooking: 20 min
  • Makes: 1 serving (96 g)
  • Difficulty: Hard
  • Diets: Vegetarian, Dairy-free
  • Contains: gluten, honey, sesame

Ingredients

  • 35 g Flour, all-purpose
  • 5 g Sesame seeds
  • 0.5 g Anise seed
  • 0.2 g Cinnamon
  • 0.3 g Baking powder
  • 20 g Vegetable oil
  • 15 g Water
  • 0.02 g Saffron
  • 20 g Honey

Method

  1. Makes 1 portion (3-4 pieces); multiply the ingredients by 8 for a full batch. Toast the sesame seeds lightly, then mix half with the flour, anise, cinnamon, baking powder and a pinch of saffron dissolved in a little warm water.
  2. Work in a little of the oil and enough of the remaining water to form a firm, smooth dough; knead well for 8-10 minutes until elastic, then rest, covered, for 20 minutes.
  3. Roll the dough thin and cut into strips; make several parallel slits down the length of each strip without cutting through the ends, then gather and pinch into a rosette or ribbon shape.
  4. Heat the remaining oil to 170 °C (340 °F) and fry the shaped cookies for 3-4 minutes, turning, until golden and crisp.
  5. While still hot, dip the fried cookies straight into warm honey for a minute so they soak it up, then lift out and drain.
  6. Scatter with the remaining toasted sesame seeds while the honey is still sticky, and let cool completely before serving; chebakia keep well for weeks in a sealed tin.
