Ingredients

  • 50 g Lemons, raw
  • 2 g Salt
  • 10 g Olive oil
  • 10 g Lemon juice

Method

  1. Makes 1 portion (about half a preserved lemon); multiply the ingredients by 8 for a jar of about 4 whole lemons. Cut the lemon almost into quarters from the top, keeping the base intact, and pack the salt generously into the cuts.
  2. Pack the salted lemon tightly into a clean, sterilized jar, pressing down so it releases some juice.
  3. Pour in the extra lemon juice so the lemon is fully submerged, adding a little water if needed to cover it completely.
  4. Seal and leave at room temperature for at least 3-4 weeks, turning or shaking the jar every few days, until the peel has softened and turned translucent.
  5. To use, rinse off the excess salt, discard the pulp if you like, and finely slice or chop the soft peel; a drizzle of olive oil helps keep leftover lemon submerged and fresh in the fridge for months.
