  • Preparation: 180 min
  • Cooking: 15 min
  • Makes: 1 serving (522 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy

Ingredients

  • 500 g Milk, whole
  • 20 g Lemon juice
  • 1.5 g Salt

Method

  1. Warm the milk in a heavy pot over medium heat until it is just below a simmer, around 85 °C (185 °F), stirring occasionally so it doesn't catch.
  2. Stir in the lemon juice, a workable stand-in for the rennet traditionally used, and remove from the heat; let it sit undisturbed for 10 minutes while the milk separates into curds and clear whey.
  3. Ladle the curds gently into a small perforated mold or a cloth-lined sieve, letting the whey drain away.
  4. Press lightly with a light weight and leave to drain for 2-3 hours at room temperature, then unmold.
  5. Sprinkle the outside with the salt, then chill for a few hours before eating fresh; akkawi is mild and often used sliced, or melted into sweet knafeh.
