Nabulsi Cheese
One serving has 311 kcal and 16 g protein, and at least a fifth of a woman's daily need of cobalamin (94%), riboflavin (77%), phosphorus (61%), calcium (57%), vitamin D (D2 + D3) (43%) and pantothenic acid (38%). Ready in 255 minutes.

- Preparation: 240 min
- Cooking: 15 min
- Makes: 1 serving (522 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free
- Contains: dairy
Ingredients
- 500 g Milk, whole
- 20 g Lemon juice
- 1.5 g Salt
- 0.5 g Cumin
Method
- Warm the milk in a heavy pot over medium heat until it is just below a simmer, around 85 °C (185 °F), stirring occasionally.
- Stir in the lemon juice, a workable stand-in for the rennet traditionally used, and remove from the heat; let it sit undisturbed for 10 minutes while the milk separates into curds and clear whey.
- Ladle the curds into a small perforated mold or cloth-lined sieve and let them drain for 1 hour at room temperature.
- Press with a light weight for 2-3 hours to firm it up into a dense, sliceable block.
- Rub the outside with the salt and the ground cumin, a pantry stand-in for the traditional nigella seed, then chill for a few hours before serving.
- Nabulsi cheese is firm and salty and, notably, doesn't melt into liquid when heated, which is exactly why it's prized as the cheese inside sweet knafeh.
