Ingredients

  • 200 g Yogurt, Greek
  • 1 g Salt
  • 0.5 g Cayenne pepper
  • 0.5 g Thyme, dried
  • 10 g Olive oil
  • 60 g Tomatoes, raw
  • 20 g Onions, red, raw
  • 5 g Parsley, fresh

Method

  1. Line a bowl with a few layers of cheesecloth and tip in the yogurt with a pinch of the salt.
  2. Gather up the cloth and hang it over a bowl in the fridge for 24-48 hours, until most of the whey has drained and the yogurt has firmed into a thick cheese.
  3. Shape the drained cheese into 2-3 small balls, then roll them in the dried thyme (za'atar) and cayenne pepper to coat.
  4. Set the cheese balls on a plate and drizzle with the olive oil.
  5. Toss the diced tomato and red onion with the parsley and a little more olive oil, and serve alongside the cheese balls.
