- Preparation: 135 min
- Cooking: 17 min
- Makes: 1 serving (271 g)
- Difficulty: Hard
- Diets: High protein
- Contains: dairy, gluten, meat
Ingredients
- 170 g Lamb shoulder, raw
- 30 g Onions, raw
- 20 g Yogurt, plain
- 0.3 g Black pepper
- 1 g Salt
- 10 g Vegetable oil
- 40 g Pita bread
Method
- Slice the lamb very thinly and mix with the grated onion, yogurt, black pepper and half the salt; marinate for at least 2 hours, or overnight, in the fridge.
- Thread the marinated lamb slices tightly onto a skewer, stacking them into a thick log as is traditional for cağ kebabı.
- Cook over a hot grill (traditionally turned horizontally next to the fire) for 12-15 minutes, turning often, until the outside is well browned.
- Shave thin slices off the outside as they cook, re-skewering them briefly on a second skewer to finish crisping for 1-2 minutes.
- Season with the remaining salt and serve hot, wrapped in warm pita if you like.
