  • Preparation: 5 min
  • Cooking: 5 min
  • Makes: 1 serving (271 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free, Low carb
  • Contains: dairy, egg

Ingredients

  • 100 g Eggs, whole, raw
  • 150 g Yogurt, Greek
  • 3 g Garlic, raw
  • 12 g Butter, unsalted
  • 0.5 g Paprika
  • 5 g Vinegar, white
  • 0.5 g Salt
  • 0.3 g Mint, dried

Method

  1. Stir the crushed garlic and a pinch of the salt into the yogurt and let it come to room temperature.
  2. Bring a pot of water to a gentle simmer with the vinegar. Crack the eggs into the water and poach for 3 minutes until the whites are set but the yolks are still soft (cook longer if serving anyone vulnerable to undercooked egg).
  3. Spread the garlic yogurt over a plate, then lift out the poached eggs with a slotted spoon and set them on top.
  4. Melt the butter in a small pan with the paprika until it sizzles and turns red, about 1 minute.
  5. Drizzle the hot chili butter over the eggs and yogurt, sprinkle with the dried mint, and serve at once.
