Dondurma
One serving has 404 kcal and 6 g protein, and at least a fifth of a woman's daily need of vitamin A (43%), riboflavin (29%), cobalamin (27%) and phosphorus (20%). Ready in 260 minutes.

- Preparation: 250 min
- Cooking: 10 min
- Makes: 1 serving (213 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free
- Contains: dairy
Ingredients
- 120 g Milk, whole
- 60 g Cream, heavy
- 25 g Sugar
- 8 g Cornstarch
Method
- Whisk the cornstarch into a splash of the cold milk until smooth.
- Heat the remaining milk with the cream and sugar in a pan until steaming, then whisk in the cornstarch mixture.
- Cook over medium-low heat, stirring constantly, for 5-6 minutes until noticeably thickened (traditional dondurma uses salep and mastic gum for its famously stretchy texture; this simplified version won't be quite as elastic but keeps the rich flavor).
- Cool completely, then churn in an ice cream maker, or freeze in a shallow container, beating well with a fork every 30 minutes for the first 2-3 hours to keep it smooth.
- Freeze until firm, then serve in scoops.
