  • Cooking: 45 min
  • Makes: 1 serving (221 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, High protein, Low carb
  • Contains: meat

Ingredients

  • 180 g Lamb shoulder, raw
  • 10 g Lamb fat
  • 30 g Onions, raw
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Cut the lamb into small cubes, keeping a little of the fat on.
  2. Put the lamb and the extra lamb fat in a heavy pan over low heat and cook, covered, for 10 minutes to render some fat and let the meat release its juices.
  3. Uncover, add the onion, salt and black pepper, and raise the heat slightly.
  4. Cook, stirring occasionally, for 30-35 minutes until all the liquid has evaporated and the meat is deeply browned and tender, almost frying in its own fat.
  5. Serve hot, as is, or spooned over rice or flatbread.
