- Preparation: 15 min
- Cooking: 25 min
- Makes: 1 serving (224 g)
- Difficulty: Medium
- Diets: Pescatarian, Gluten-free, Dairy-free
- Contains: shellfish
Ingredients
- 90 g Mussels, raw
- 25 g Rice, white, medium-grain
- 20 g Onions, raw
- 5 g Pine nuts
- 8 g Currants, dried
- 0.2 g Allspice
- 0.1 g Cinnamon
- 8 g Olive oil
- 8 g Lemon juice
- 60 g Water
Method
- Cook the onion in the olive oil for 3-4 minutes until soft, then add the rice, pine nuts, currants, allspice and cinnamon, and stir for 1 minute.
- Add the water, bring to a boil, then cover and simmer for 8-10 minutes until the rice has absorbed most of the liquid but is still slightly underdone; it will finish cooking with the mussels.
- Open the mussel shells carefully and spoon a little of the rice mixture into each one, closing the shells around the filling.
- Stack the stuffed mussels in a steamer, or a wide pot with a little water in the base, cover, and steam for 12-15 minutes until the mussels are fully cooked and the rice is tender.
- Let cool slightly, then serve with lemon wedges for squeezing over.
