  • Preparation: 20 min
  • Cooking: 45 min
  • Makes: 1 serving (391 g)
  • Difficulty: Hard
  • Diets: High protein
  • Contains: celery, dairy, egg, gluten, nut, poultry

Ingredients

  • 60 g Rice, white, long-grain
  • 100 g Chicken thighs, boneless, skinless, raw
  • 20 g Onions, raw
  • 10 g Currants, dried
  • 10 g Almonds
  • 15 g Butter, unsalted
  • 100 g Chicken broth
  • 0.8 g Salt
  • 40 g Flour, all-purpose
  • 20 g Water
  • 15 g Eggs, whole, raw

Method

  1. Cook the onion in half the butter for 3-4 minutes until soft, add the rice and stir for 1 minute, then add the chicken broth and salt.
  2. Bring to a boil, cover, and cook for 12-15 minutes until the rice is just tender; stir in the diced cooked chicken, currants and almonds, and let cool slightly.
  3. Mix the flour with the water and a pinch of salt to a smooth, thin, elastic dough. Roll it out very thin and use it to line a greased, deep round baking dish, leaving enough overhang to fold over the top.
  4. Spoon the rice and chicken filling into the dough-lined dish, packing it down gently, then fold the overhanging dough over the top to fully enclose it, sealing the edges; brush with the beaten egg.
  5. Bake at 190 °C (375 °F) for 30-35 minutes until the dough shell is golden and crisp.
  6. Rest for 5 minutes, then invert onto a serving plate so the golden dome shows, and cut into wedges to reveal the rice inside.
