Tarhana Soup
One serving has 185 kcal and 5 g protein, and at least a fifth of a woman's daily need of vitamin C (45%), riboflavin (20%) and vitamin A (20%). Ready in 37 minutes.

- Preparation: 15 min
- Cooking: 22 min
- Makes: 1 serving (419 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, gluten
Ingredients
- 60 g Yogurt, plain
- 20 g Flour, all-purpose
- 60 g Tomatoes, raw
- 20 g Bell pepper, red, raw
- 250 g Water
- 8 g Butter, unsalted
- 0.3 g Mint, dried
- 0.3 g Paprika
- 0.8 g Salt
Method
- Blend or mash the tomato and bell pepper until smooth, then mix with the yogurt and flour to a smooth batter; this stands in for the dried, fermented tarhana mix, which is traditionally left to ferment for several days, then sun-dried and crumbled before use.
- Whisk the batter into the water in a pot, making sure there are no lumps.
- Bring to a gentle boil, whisking occasionally, then reduce the heat and simmer for 15-20 minutes until thickened into a smooth, creamy soup.
- Season with the salt and paprika.
- Melt the butter with the dried mint and drizzle it over the soup just before serving.
