  • Cooking: 25 min
  • Makes: 1 serving (166 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, honey

Ingredients

  • 70 g Flour, all-purpose
  • 1 g Yeast, active dry
  • 25 g Eggs, whole, raw
  • 20 g Ghee
  • 25 g Water
  • 5 g Sugar
  • 20 g Honey
  • 0.3 g Cumin

Method

  1. Mix the flour, yeast, sugar, egg and water to a soft, slightly sticky dough; knead for 8-10 minutes until smooth and elastic.
  2. Cover and let rise for 45-60 minutes until puffy.
  3. Divide into a few pieces and stretch or roll each one very thin, brushing generously with the melted ghee between each layer as you stack them into a round pan.
  4. Bake at 190 °C (375 °F) for 20-25 minutes until puffed and golden, and the layers separate slightly.
  5. While still warm, drizzle generously with the honey and scatter with nigella seeds (cumin seeds are used here as the nearest catalog stand-in).
  6. Pull apart at the layers to serve, while warm.
