  • Preparation: 100 min
  • Cooking: 18 min
  • Makes: 1 serving (142 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 55 g Flour, all-purpose
  • 35 g Butter, unsalted
  • 20 g Milk, whole
  • 12 g Eggs, whole, raw
  • 10 g Sugar
  • 1 g Yeast, active dry
  • 0.4 g Salt
  • 0.5 g Cinnamon
  • 8 g Sugar, brown

Method

  1. Warm the milk and dissolve the yeast and a little of the sugar in it; let stand for 10 minutes until foamy, then mix in the egg, remaining sugar and salt, and work in the flour to a smooth dough; chill for 20 minutes.
  2. Roll the dough out, dot two-thirds of the butter over it in a thin layer, fold into thirds, and chill again; repeat this rolling, buttering and folding twice more to build up flaky layers.
  3. Mix the remaining butter with the brown sugar and cinnamon to make the remonce filling.
  4. Roll the laminated dough out thin, spread with the remonce, and roll or fold into a pastry shape (spiral, pinwheel or braid); let rise for 45 minutes.
  5. Bake at 200 °C (400 °F) for 15-18 minutes until puffed and deep golden; cool slightly before serving.
