  • Cooking: 22 min
  • Makes: 1 serving (142 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, nut

Ingredients

  • 50 g Flour, all-purpose
  • 30 g Butter, unsalted
  • 15 g Milk, whole
  • 10 g Eggs, whole, raw
  • 8 g Sugar
  • 1 g Yeast, active dry
  • 20 g Almond paste
  • 8 g Sugar, powdered
  • 0.4 g Salt

Method

  1. Make a laminated yeast dough as for Danish pastry: mix the milk, yeast, egg, sugar, salt and flour into a smooth dough, chill, then roll, dot with butter, fold and chill, repeating three times to build flaky layers.
  2. Roll the dough into a long strip, spread with the almond paste filling along the center, and roll up lengthwise into a rope.
  3. Shape the rope into a pretzel or oval ring on a lined tray and let rise for 30 minutes.
  4. Bake at 190 °C (375 °F) for 20-25 minutes until deep golden.
  5. Cool, then drizzle with icing made from the powdered sugar mixed with a few drops of water. Makes 1 serving (one slice); multiply by 8-10 for a whole kringle.
