  • Preparation: 15 min
  • Cooking: 50 min
  • Makes: 1 serving (357 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: alcohol, dairy, nut

Ingredients

  • 30 g Rice, white, short-grain
  • 200 g Milk, whole
  • 1 g Vanilla extract
  • 18 g Sugar
  • 15 g Almonds
  • 50 g Cream, heavy
  • 40 g Cherries, sour
  • 3 g Cornstarch

Method

  1. Cook the rice in the milk with the vanilla over low heat, stirring occasionally, for about 35-40 minutes until thick and creamy like a rice pudding; stir in half the sugar and let cool completely.
  2. Whip the cream to soft peaks and fold it into the cooled rice pudding along with the chopped almonds (tuck in one whole almond if you like the traditional game).
  3. Chill the risalamande well before serving.
  4. For the cherry sauce, simmer the sour cherries with the remaining sugar and a splash of water for 10 minutes, then stir in the cornstarch mixed with a little cold water and simmer until glossy and thickened.
  5. Spoon the cold rice pudding into bowls and top with the warm or cold cherry sauce.
