  • Preparation: 15 min
  • Cooking: 15 min
  • Makes: 1 serving (226 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten, nut

Ingredients

  • 40 g Flour, all-purpose
  • 70 g Milk, whole
  • 25 g Eggs, whole, raw
  • 10 g Butter, unsalted
  • 25 g Walnuts
  • 10 g Raisins
  • 12 g Sugar
  • 5 g Cocoa powder
  • 20 g Cream, heavy
  • 8 g Spirits
  • 1 g Vanilla extract

Method

  1. Whisk the flour, milk, egg and a little of the melted butter into a smooth, thin crepe batter, and let rest for 15 minutes.
  2. Cook thin crepes in a lightly buttered pan, about 1 minute per side, and stack them as you go; this makes about 2 crepes for one serving.
  3. Finely chop the walnuts and raisins, mix with a little sugar and the vanilla, and warm gently with a splash of milk until it forms a spreadable paste; spread over each crepe and fold into quarters.
  4. Melt the cream with the cocoa powder and remaining sugar over low heat to make a smooth chocolate sauce, then stir in the rum off the heat.
  5. Warm the folded crepes gently in the sauce and serve immediately, spooned over with extra sauce.
