  • Makes: 1 serving (383 g)
  • Difficulty: Hard
  • Diets: High protein
  • Contains: celery, dairy, egg, gluten, poultry

Ingredients

  • 35 g Flour, all-purpose
  • 60 g Milk, whole
  • 25 g Eggs, whole, raw
  • 120 g Chicken thighs, boneless, skinless, raw
  • 40 g Onions, raw
  • 2 g Paprika
  • 10 g Vegetable oil
  • 30 g Sour cream
  • 60 g Chicken broth
  • 1 g Salt
  • 0.2 g Black pepper

Method

  1. Whisk the flour, milk and egg into a smooth, thin crepe batter; cook thin crepes in a lightly oiled pan, about 1 minute per side, and set aside.
  2. Sauté the onion in the oil until soft, take off the heat and stir in the paprika, then add the chicken, return to the heat and cook for 3-4 minutes.
  3. Pour in the chicken broth, season with salt and pepper, cover and simmer for 15-18 minutes until the chicken is cooked through with no pink juices.
  4. Lift out some of the chicken to use as visible filling, then blend the rest of the sauce and remaining chicken until smooth, and stir in the sour cream to make a creamy paprika sauce.
  5. Fill each crepe with a little of the chicken filling, roll up, place on a plate, and pour the smooth paprika sauce generously over the top to serve.
