Laufabrauð (Icelandic Leaf Bread)
One serving has 344 kcal and 6 g protein, and at least a fifth of a woman's daily need of thiamin (40%), selenium (35%), riboflavin (28%), folate (25%), niacin (23%) and manganese (21%). Ready in 33 minutes.

- Preparation: 30 min
- Cooking: 3 min
- Makes: 1 serving (92.5 g)
- Difficulty: Hard
- Diets: Vegetarian
- Contains: dairy, gluten
Ingredients
- 55 g Flour, all-purpose
- 2 g Sugar
- 0.5 g Salt
- 20 g Milk, whole
- 5 g Butter, unsalted
- 10 g Vegetable oil
Method
- Warm the milk and melted butter together until lukewarm, then work into the flour, sugar and salt to make a firm, smooth dough. This makes 1 portion (2-3 rounds); multiply by 8 for a full holiday batch.
- Rest the dough for 20 minutes, then roll it out as thinly as possible and cut into rounds about 12-15 cm across.
- Using a sharp small knife or a special leaf-bread cutter, score each round with a fine, symmetrical leaf or geometric pattern, cutting most of the way through.
- Heat plenty of oil in a deep pan to 190 °C (375 °F) and fry each round for 30-45 seconds per side until pale golden and crisp, gently pulling the cut pattern open with a fork as it fries; only a little oil is actually absorbed.
- Drain on paper towels and cool; laufabrauð is served alongside hangikjöt and other Christmas dishes, and keeps well in a tin.
