One serving has 276 kcal and 15 g protein, and at least a fifth of a woman's daily need of cobalamin (81%), riboflavin (66%), phosphorus (52%), calcium (47%), vitamin D (D2 + D3) (34%) and selenium (31%). Ready in 970 minutes.

- Preparation: 960 min
- Cooking: 10 min
- Makes: 1 serving (425 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free
- Contains: dairy
Ingredients
- 400 g Milk, whole
- 20 g Yogurt, Greek, nonfat
- 5 g Sugar
Method
- Heat the milk in a saucepan to just below boiling, about 90 °C (194 °F), stirring so it doesn't catch, then remove from the heat and let it cool to about 40 °C (104 °F).
- Whisk the live yogurt into the warm milk until fully mixed in; this starter culture is what turns the milk into skyr.
- Pour into a clean jar, cover loosely, and leave in a warm spot for 7-8 hours, until thickened and pleasantly sour.
- Line a sieve with clean muslin or cheesecloth, set it over a bowl, and pour in the cultured milk; refrigerate and let it drain for 8-10 hours, until thick.
- Save the drained whey for baking or discard it, spoon the thick skyr into a bowl, stir in the sugar if you like, and serve chilled.
