  • Makes: 1 serving (437 g)
  • Difficulty: Hard
  • Diets: Gluten-free, High protein
  • Contains: dairy, egg, pork

Ingredients

  • 220 g Potatoes, russet, raw
  • 10 g Potato starch
  • 130 g Pork, ground, raw
  • 20 g Onions, raw
  • 10 g Eggs, whole, raw
  • 1.5 g Salt
  • 0.3 g Black pepper
  • 25 g Bacon, raw
  • 20 g Sour cream

Method

  1. Peel the potatoes and finely grate about two-thirds of them, wrap in a cloth and squeeze the liquid into a bowl; let the starch settle, then pour off the watery top layer and keep the starch.
  2. Boil the remaining potatoes until tender, mash them, then mix with the grated raw potato and reserved starch to make a smooth, sticky dough.
  3. Mix the ground pork (about 130 g, the edible meat for a generous filling) with the finely chopped onion, egg, salt and pepper to make the filling.
  4. With wet hands, flatten a portion of the potato dough, place a spoonful of filling in the centre, and fold and shape into a large oval dumpling, sealing the edges well.
  5. Lower the dumplings into a large pot of gently boiling salted water and cook for 35-40 minutes until they float and are cooked through (cut one open to check the pork is no longer pink, 74 °C/165 °F).
  6. While they cook, fry the diced bacon until crisp; serve the dumplings topped with the bacon and its fat, and a spoonful of sour cream.
