Kibinai (Lithuanian Karaim Lamb Pasties)
One serving has 694 kcal and 28 g protein, and at least a fifth of a woman's daily need of cobalamin (115%), selenium (84%), niacin (81%), thiamin (64%), zinc (58%) and riboflavin (55%). Ready in 57 minutes.

- Preparation: 35 min
- Cooking: 22 min
- Makes: 1 serving (262 g)
- Difficulty: Medium
- Diets: Dairy-free
- Contains: gluten, meat
Ingredients
- 70 g Flour, all-purpose
- 10 g Vegetable oil
- 30 g Water
- 1.5 g Salt
- 120 g Lamb, ground, raw
- 30 g Onions, raw
- 0.3 g Black pepper
Method
- Make a simple dough by mixing the flour, oil, salt and water into a smooth, firm ball; cover and rest for 20 minutes. This makes 1 serving of 2 pasties; multiply for more.
- Mix the ground lamb with the finely chopped onion, salt and pepper to make a juicy filling.
- Divide the dough into 2 pieces and roll each into a thin circle about 15 cm across.
- Spoon the lamb filling onto one half of each circle, fold the dough over to make a half-moon, and crimp the edges firmly to seal.
- Bake at 200 °C (400 °F) for 20-25 minutes until the pastry is golden and the lamb is cooked through with no pink remaining (74 °C/165 °F internally).
- Serve hot; traditionally the hot broth that collects inside is sipped out before eating the pastry.
