Grey Peas with Speck (Pelēkie Zirņi ar Speķi)
One serving has 521 kcal and 27 g protein, and at least a fifth of a woman's daily need of copper (86%), thiamin (72%), fiber (70%), manganese (65%), phosphorus (55%) and zinc (47%). Ready in 65 minutes.

- Preparation: 10 min
- Cooking: 55 min
- Makes: 1 serving (176 g)
- Difficulty: Easy
- Diets: Gluten-free, Dairy-free
- Contains: pork
Ingredients
- 90 g Split peas, dried
- 45 g Bacon, raw
- 40 g Onions, raw
- 1 g Salt
- 0.3 g Black pepper
Method
- Rinse the split peas (used here in place of the harder-to-find Latvian grey field peas) and simmer in plenty of water for 40-50 minutes until soft and starting to break down, then drain.
- While the peas cook, dice the bacon (standing in for speck) and fry in a pan over medium heat until crisp and golden, releasing its fat.
- Add the chopped onion to the bacon pan and cook for 5 minutes until soft and lightly browned.
- Stir the bacon, onion and their fat through the drained peas, mashing lightly with a fork so the mixture holds together.
- Season with the salt and black pepper and serve warm.
