Jāņu Siers (Latvian Caraway Curd Cheese)
One serving has 247 kcal and 20 g protein, and at least a fifth of a woman's daily need of phosphorus (43%), selenium (41%), cobalamin (37%), riboflavin (34%), pantothenic acid (25%) and choline (24%). Ready in 270 minutes.

- Preparation: 255 min
- Cooking: 15 min
- Makes: 1 serving (186 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free, Low carb
- Contains: dairy, egg
Ingredients
- 150 g Cottage cheese
- 25 g Eggs, whole, raw
- 8 g Butter, unsalted
- 2 g Caraway seeds
- 0.8 g Salt
Method
- Heat the cottage cheese gently in a saucepan over low heat, stirring, until it starts to release its whey, about 5 minutes.
- Beat in the egg, butter, caraway seeds and salt, and keep stirring over low heat until the mixture thickens and pulls together into a smooth mass, 8-10 minutes; keep the heat low so the egg doesn't scramble.
- Line a small mould or sieve with muslin, pack in the warm curd mixture, and fold the cloth over the top.
- Press with a light weight and refrigerate for at least 4 hours, until firm and cool.
- Unwrap, slice, and serve the caraway cheese cold; it is the traditional centrepiece of the Jāņi midsummer table.
