  • Cooking: 48 min
  • Makes: 1 serving (182 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, gluten

Ingredients

  • 35 g Flour, rye
  • 8 g Sour cream
  • 10 g Water
  • 0.5 g Salt
  • 60 g Potatoes, raw
  • 50 g Carrots, raw
  • 8 g Sugar
  • 10 g Cream, heavy
  • 0.5 g Caraway seeds

Method

  1. Mix the rye flour with the sour cream, water and salt into a firm dough; wrap and rest for 20 minutes. This makes 1 tart; multiply by 8 for a batch.
  2. Boil the potato and carrot separately until tender, then drain and mash each well.
  3. Combine the mashed potato and carrot with the sugar, cream and caraway seeds to make a smooth, lightly sweet filling.
  4. Roll the rye dough into a thin circle and shape it by hand into a small open cup with pinched, fluted edges, or drape it over an upturned muffin tin.
  5. Fill with the potato-carrot mixture and bake at 200 °C (400 °F) for 25-30 minutes until the crust is crisp and the filling is lightly set and golden at the edges.
  6. Cool before serving; sklandrausis is traditionally eaten at room temperature.
