  • Makes: 1 serving (228 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: beef, egg, gluten

Ingredients

  • 90 g Flour, all-purpose
  • 1.5 g Yeast, active dry
  • 2 g Sugar
  • 0.7 g Salt
  • 50 g Water
  • 5 g Olive oil
  • 25 g Beef, dried
  • 50 g Eggs, whole, raw
  • 0.5 g Paprika
  • 3 g Vegetable oil

Method

  1. Dissolve the yeast and sugar in the warm water, then mix in the flour, salt and olive oil to a soft dough; knead for 8 minutes until smooth.
  2. Cover and let rise in a warm place for 1 hour, until doubled.
  3. Shape the dough into a long oval 'boat' about 25 cm long on an oiled tray, and brush the surface with the vegetable oil.
  4. Lay the strips of dried cured beef (standing in for Macedonian pastrma) over the dough and bake at 220 °C (425 °F) for 12-15 minutes until the crust is golden.
  5. Take the bread out, crack the egg into the middle, sprinkle with paprika, and return to the oven for 3-4 minutes more until the egg white is just set and the yolk still soft; cook longer, until the yolk is fully set, if serving young children, older adults or anyone pregnant.
  6. Serve immediately while hot, traditionally with a spoonful of plain yogurt on the side.
