  • Difficulty: Medium
  • Diets: Vegan, Dairy-free
  • Contains: gluten

Ingredients

  • 90 g Butter beans, dried
  • 50 g Onions, raw
  • 15 g Vegetable oil
  • 2 g Paprika
  • 0.3 g Cayenne pepper
  • 0.5 g Mint, dried
  • 5 g Flour, all-purpose
  • 1 g Salt

Method

  1. Soak the dried beans (a stand-in for Macedonia's large tetovac beans) in plenty of cold water overnight, then drain and rinse.
  2. Put the beans in a pot, cover with fresh water, bring to a boil and cook for 45-60 minutes until just tender but not falling apart; drain, keeping a cup of the cooking liquid.
  3. Fry the chopped onion in the oil until soft, then stir in the paprika, cayenne and half the dried mint.
  4. Mix the beans with the onion mixture and the flour, then transfer to a baking dish and add enough of the reserved cooking liquid to just cover.
  5. Bake uncovered at 200 °C (400 °F) for 30-40 minutes until the top is browned and the liquid has mostly been absorbed.
  6. Season with the salt, scatter with the remaining mint, and serve hot straight from the dish.
