One serving has 353 kcal and 6 g protein, and at least a fifth of a woman's daily need of selenium (38%), choline (29%), thiamin (27%), riboflavin (25%), folate (22%) and vitamin K (21%). Ready in 28 minutes.

- Preparation: 20 min
- Cooking: 8 min
- Makes: 1 serving (86.5 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: alcohol, dairy, egg, gluten
Ingredients
- 35 g Flour, all-purpose
- 15 g Egg yolks, raw
- 8 g Sugar
- 10 g Cream, heavy
- 0.3 g Cardamom
- 5 g Spirits
- 0.2 g Salt
- 10 g Vegetable oil
- 3 g Sugar, powdered
Method
- Beat the egg yolks with the sugar until pale and thick, then whisk in the cream, cardamom, spirits and salt.
- Work in the flour to form a smooth, firm dough; wrap and rest for 20 minutes.
- Roll the dough thin and cut into small diamonds, slitting a short line in the centre of each and pulling one corner through the slit to make the twisted fattigmann shape.
- Heat plenty of oil in a deep pan to 180 °C (350 °F) and fry the pastries in batches for 1-2 minutes, turning once, until golden brown; only a little oil is actually absorbed.
- Drain on paper towels, dust with the powdered sugar once cool, and serve.
