  • Makes: 1 serving (103 g)
  • Difficulty: Hard
  • Diets: Vegetarian, Gluten-free, Dairy-free
  • Contains: alcohol, egg, nut

Ingredients

  • 45 g Almond flour
  • 43 g Sugar, powdered
  • 15 g Egg whites, raw
  • 0.2 g Vanilla extract

Method

  1. Mix the ground almonds with most of the powdered sugar (about 35 g), then work in enough egg white (about 12 g) and the vanilla to form a smooth, firm marzipan-like dough. This is enough for 2 small rings; multiply by 9-10 and shape into 18 graduated rings for a full kransekake tower.
  2. Roll the dough into ropes and shape into rings on a lined tray, sized according to which layer of the tower you are making.
  3. Bake at 175 °C (350 °F) for 10-12 minutes until just set and lightly golden at the edges; cool completely on the tray, as the rings are fragile while warm.
  4. Whisk the remaining powdered sugar with the remaining egg white (and a drop of water if needed) to make a thick, smooth icing.
  5. If building the full tower, stack the cooled rings largest to smallest with a little icing between each to secure them, then pipe zigzag lines of icing over the whole tower to decorate; for a single portion, simply drizzle the icing over the rings.
