  • Makes: 1 serving (141 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten, nut

Ingredients

  • 20 g Flour, all-purpose
  • 10 g Butter, unsalted
  • 10 g Egg yolks, raw
  • 20 g Sugar
  • 20 g Egg whites, raw
  • 8 g Hazelnuts
  • 30 g Cream, heavy
  • 20 g Milk, whole
  • 3 g Cornstarch
  • 0.3 g Vanilla extract

Method

  1. Cream the butter with half the sugar, beat in the egg yolks, then fold in the flour to make a soft sponge batter; spread into a small greased tin.
  2. Whisk the egg whites to soft peaks, gradually add the remaining sugar, and whisk to a stiff, glossy meringue.
  3. Spread the meringue over the sponge batter, scatter with the chopped hazelnuts, and bake at 160 °C (325 °F) for 25-30 minutes until the meringue is pale golden and crisp; cool completely.
  4. Whisk the milk, cornstarch and vanilla in a small saucepan over medium heat for 4-5 minutes until thickened into a custard; cool.
  5. Whip the cream to soft peaks and fold into the cooled custard.
  6. Split the cooled cake if needed, spread with the custard cream, and serve; this is Norway's beloved 'world's best cake' (verdens beste).
