Ingredients

  • 150 g Potatoes, russet, raw
  • 30 g Flour, all-purpose
  • 10 g Butter, unsalted
  • 15 g Cream, heavy
  • 0.8 g Salt

Method

  1. Boil the potatoes until very tender, then drain, mash well, and let cool completely (ideally overnight).
  2. Work the butter, cream, salt and flour into the cold mashed potato to make a soft, pliable dough.
  3. Divide into 1-2 pieces and roll each out very thin on a floured surface.
  4. Cook on a dry griddle or heavy pan over medium-high heat for 1-2 minutes per side, until lightly speckled brown but still soft.
  5. Stack the warm lefse between clean kitchen towels to keep them soft and pliable, and serve rolled up with butter and sugar, or with savoury toppings.
