  • Cooking: 18 min
  • Makes: 1 serving (146 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 45 g Flour, all-purpose
  • 50 g Milk, whole
  • 1 g Yeast, active dry
  • 11 g Sugar
  • 8 g Butter, unsalted
  • 10 g Eggs, whole, raw
  • 8 g Egg yolks, raw
  • 0.2 g Cardamom
  • 0.3 g Salt
  • 3 g Cornstarch
  • 0.2 g Vanilla extract
  • 5 g Sugar, powdered
  • 4 g Coconut, desiccated

Method

  1. Warm half the milk and dissolve the yeast and a pinch of the sugar in it; leave for 10 minutes until frothy, then mix in the flour, whole egg, butter, cardamom and salt to a soft dough; knead for 6 minutes.
  2. Cover and let rise for 45 minutes until puffed, then shape into a round bun, place on a tray, press a shallow hollow in the centre, and let rise a further 15 minutes.
  3. Meanwhile, whisk the egg yolk, remaining sugar and cornstarch with the remaining milk in a small saucepan; cook over medium heat, whisking, for 3-4 minutes until thickened into a custard; stir in the vanilla and cool slightly.
  4. Spoon the custard into the hollow of the bun and bake at 200 °C (400 °F) for 12-15 minutes until golden.
  5. Cool, then mix the powdered sugar with a few drops of water to make a thin icing, drizzle around the edge of the custard, and scatter with the desiccated coconut.
