  • Makes: 1 serving (401 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free
  • Contains: alcohol, pork, sulphite

Ingredients

  • 120 g Sauerkraut
  • 50 g Cabbage, green, raw
  • 90 g Pork shoulder, raw
  • 45 g Kielbasa
  • 15 g Bacon, raw
  • 30 g Onions, raw
  • 20 g Prunes
  • 10 g Tomato paste
  • 0.5 g Bay leaves
  • 0.3 g Allspice
  • 20 g Wine, red

Method

  1. Rinse the sauerkraut briefly if it tastes very sour, then combine with the shredded cabbage in a large pot with a splash of water; simmer for 15 minutes.
  2. Meanwhile, cut the pork into bite-sized pieces and dice the bacon; brown both in a separate pan for 6-8 minutes, then add the sliced kielbasa and chopped onion and cook for 3-4 minutes more.
  3. Stir the browned meats into the cabbage pot along with the tomato paste, bay leaf, allspice and red wine.
  4. Cover and simmer gently for 1-1.5 hours, stirring occasionally and adding a little water if it looks dry.
  5. Add the prunes for the last 20 minutes of cooking, until they've softened and the stew has thickened.
  6. Bigos tastes even better the next day, reheated; serve hot with rye bread.
